Easy Quinoa Tabbouleh Salad, Heather Marino-Garcia, MS, RD
¾ cup quinoa, uncooked
10 cherry tomatoes (cut in half)
1/2 cup chopped English cucumber
¹⁄3 cup chopped fresh parsley
1/3 cup finely chopped red bell pepper
½ cup chopped fresh basil
3 tbsp. fresh lemon juice
1 tbsp. extra virgin olive oil
2 tbsp. red wine vinegar
Prepare quinoa according to package directions using 1¼ cups water and let stand 15 minutes. Add tomatoes, cucumber, parsley, pepper, basil, lemon juice, oil, vinegar, and salt/pepper to taste; toss to combine. Cover and refrigerate.
