Eating a rainbow of healthy veggies is easy with this side dish. Perfect for potlucks and family dinners, this pasta salad is packed with brightly colored veggetables and flavorful herbs.
Quick Pasta Salad
Makes 16 side dish servings
3 cups of penne pasta, cooked without salt and fat, rinsed and drained
1/3 cup frozen whole kernel corn, thawed
1/3 cup medium sweet red pepper, diced
½ cup reduced fat shredded cheddar cheese
1 small (6 ounce) can sliced black olives, rinsed and drained
1 cup cherry tomatoes, halved
1 tablespoon chopped onion
1 teaspoon dried basil
1 teaspoon dried oregano
¼ cup olive oil
¼ cup red wine vinegar
Combine pasta through oregano in a large bowl. Drizzle with oil and vinegar to taste, tossing ingredients gently to coat. Cover and chill 2 to 24 hours.
